Wild garlic (a.k.a ramsons) grows wild right across the UK.
They are at their best and most flavoursome when bright green before the flowers open. Dense clusters of green spears thrust from the woodland floor in spring and they are a sign that the woodland you are walking in is very old. Wild garlic likes damp ground where it will grow in abundance, with hundreds of green leaves growing on a single green stem. The Season for wild garlic doesn't last very long and fresh leaves won't store well but wild garlic can be frozen to preserve its freshness.
