A popular vegetable all over the Mediterranean, globe artichokes have a sweet and mild nutty flavour
Although the heart is the most prized part of the artichoke the petals can also be eaten. The French artichokes have large buds that are hollowed out and stuffed and the Italian types produce much smaller buds that are eaten whole. Growing and cooking globe artichokes may seem luxurious, as there is so little flesh, but once you taste artichoke hearts, you will understand why chefs are so enthusiastic about this particular member of the thistle family. Globe artichokes have always been considered a delicacy and can be stuffed, fried, baked, used in salads and eaten hot or cold. We feel this is the best time to use these artichokes as the quality is at its best and the price at its lowest.
